Usually the max top speed of pedal assist on an electric bike is 28mph but most top out around 22 - 24mph. Believe me, that is flying, if you plan to cruise at or around 20mph make sure to wear a helmet.
Electric Bike Throttles
In the US a lot of e-bikes but not all, come with a throttle. A throttle can either be a push throttle or a twist throttle. The push throttle engages when the rider pushes it with their thumb, like a gas pedal. The more you push it the faster the motor will go. Because you the ability to easily control the speed with the throttle you can maneuver simply and easily. A 250-watt e bike is great for flat ground riding and also hills depending on the riders weight. Riders under 200lbs will have no problem tackling hills on a 250 watt electric bicycle. If riders over 200lbs plan to take on routes that include a lot of hills then it will be best for them to consider a 500 or 750 watt e bike. On flat ground 250 watts will be enough even for 300lb riders. Riders will be able to achieve top speeds of up to 18mph by just pushing the throttle and 20mph using the pedal assist. Many riders prefer 250 watts because it provides enough thrust when you want assistance while pedaling or using the throttle but doesn't overpower the rider. Many senior riders like this size electric bike motor because it's a safe, easy to control power level. Also, for the riders that still want to get some exercise, 250 watts is just enough to help with the pedaling but still allow the rider to exert themselves as they see fit. 500 watt

750 watt
A 750-watt motor is the largest you can legally have in the US and still classify it as an electric bicycle. Anything bigger would technically not qualify as a bicycle, and thus would technically not be able to be ridden in bike lanes or paths. 750 watt is a lot of power, and is not something all riders need. Riders under 200lbs can probably stay away from 750 watt motor, unless you really want to accelerate and go fast. Now, riders over 200lbs can definitely consider a 750 watt motor. This size motor will give heavier riders the assistance they need to make it up any size hill. On flat ground, you won't notice a huge difference between 250, 500 and 750 watt motors but on hills you will. A 750 watt will get you up a hill and quick. In fact, you could just use the throttle on a 750 watt and you'll still easily climb the hill. Again, a bigger motor means a bigger battery, which also means a bigger price tag, sometimes, but not always. Also, a bigger motor can tend to drain the battery quicker, but that also depends on how the rider utilizes the motor during their rides.
Braking on an E Bike
The brakes on electric bicycles are a key element, as they are on any type of bicycle. You want to ensure you can safely stop especially since riders will be traveling at higher speeds than on a non-electric bike. The calipers rest on a disc, and when you pull the brake lever the pads clamp down on the disc bring the bicycle to a stop. Brake pads do occasionally need to be changed to ensure the brakes keep performing at the level they need to.
